I’s time to get pumpkins! This activity can be really fun and really expensive. Hunting for the right pumpkin can be very fun for the family and some places have taken this process to a whole new level. Hay rides, cocoa, corn mazes and more; which also means that the price of the pumpkin goes up! Enjoy these fun activities because fall flies by. If Halloween isn’t your favorite holiday and you want to start saving bucks for your Christmas shopping, try your local grocer. Whole Foods has pumpkins on sale 4 for $10. At $2.50 a piece, you can save enough to go to lunch or buy some stocking stuffers.

Food Friday – Boo Berry Vampire Cupcakes!

Halloween treats are always fun to make! They can be cute, crunchy, creamy and crumby. These creepy cupcakes are easy, yummy and lower in sugar than you might think!

Take a look at how easy they are!

 

What you need:

Cupcakes:

1 yellow cake mix

1 container greek yogurt (single serving size, about 5.3oz.) We used cherry but you can use what you want. We just happened to have cherry in the fridge. Blueberry, raspberry and strawberry will all work.

1 cup water

1/4 blueberries (if you want) Use what every fruit and yogurt flavors you like together.

Frosting: We used a store bout tub and added blueberries and blue food coloring. If you would like to make your own low calorie version, we recommend checking out this recipe from Allrecipes

 

What you do:

1.Preheat over according to cake mix

2.Put muffin papers in muffin pan

3. Mix all batter ingredients in a a bowl

4. Use ice-cream scoop to pour even amounts in each cup.

5. Bake according to cake mix instructions

6. Wait for cupcakes to completely cool

 

Use your favorite frosting option to top each cupcake. Decorate using Halloween picks and wrappers. We found these at our local dollar store. Visit your local grocer or dollar store and build your own cupcake using this method.  Happy Halloween!!

It’s pumpkin spice season!!! Who doesn’t love that smell? Time to stock up on your favorite sent. It’s a sad day when you run out of your favorite candle smell and it’s no longer available at the store. Well we have a thrifty tip for you. Try freezing those candles before you burn them. They will burn a lot longer and save you some money to boot! This works will all candles but we really love this fall favorite.

Food Friday – Caprese Garlic Bread

Alright this might be a new favorite! If you like caprese and garlic bread(who doesn’t), you’re going to love this! Two Peas & their Pod, and Land O’ Lakes teamed up to try and tempt our taste buds and they’ve succeeded! lets get to the recipe so we can get eating!

Caprese Garlic Bread

Yield: Serves 8

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Garlic bread with fresh mozzarella cheese, tomatoes, basil, and a drizzle of balsamic! The best garlic bread you will ever eat!

ingredients:

1 loaf ciabatta bread, horizontally cut in half
4 tablespoons salted butter
3 cloves garlic, minced
12 oz. fresh mozzarella cheese, sliced
1/2 cup balsamic vinegar
2 medium tomatoes, sliced
Salt and freshly ground black pepper, to taste
1/3 cup chopped fresh basil

directions:

1. Preheat oven to 400 degrees F. Place both sides of the baguette on a large baking sheet with the cut side up.

2. In a small bowl, combine butter and garlic and spread evenly on bread halves. Place the mozzarella cheese slices on top of the bread, making sure the cheese covers the bread completely. Bake the bread for 12-15 minutes or until the cheese is melted.

3. While the bread is in the oven, make the balsamic reduction. Place the balsamic vinegar in a small saucepan. Bring the vinegar to a boil, decrease the heat to low, and simmer, stirring occasionally, until the mixture is reduced by about half. This should only take about 5-7 minutes. Set aside.

4. Remove the bread from oven. Top the bread with tomato slices. Season with salt and pepper, to taste. Add the fresh basil and drizzle with balsamic reduction. Cut into slices and serve.

Food Friday – Football Snacks (the healthy version)

 

Football season is in full swing! That means snacks! We love to eat while watching our favorite teams, but those snacks add up. We are going to give you a little advise on keeping calories down during the snacking season.

The first thing you can do is start by substituting “this for that”. Here are a few ideas:

 

This

That

Pizza

Turkey Chili

Chips & Dip

Homemade Tortilla Chips & Salsa

Chicken nuggets or tenders

Shrimp Cocktail

Cheese and Crackers

Mini Bruschetta

Licorice or Candy

Cut fruit with yogurt dip or choc. strawberries

Any freezer snacks (pizza rolls, taquitos, potato skins, pigs in a blanket, wings)

Homemade versions

Although the freezer versions of these snacks sound easy, they are expensive and still take time to prepare. Oven space and different temperature settings are a hassle. We are going to give you a few easy recipes that will help to create a delicious and healthier version for snaking at this weekends game.

 1. Turkey Chili-

  • Cooking light has a great list of 32 different healthy chili’s for the big game

2. Chips & Salsa :

Chips:

  • Find a stoneground corn tortilla with low calories
  • Use a pizza cutter to into 8 triangles
  • Place tortilla chips on a cookie sheet
  • Lightly salt
  • Bake at 350 for about 10 mins. (make sure chips are crisp but watch closely to prevent burning)

Salsa: You can be as creative as you want here!

  • 4 tomatoes (garden if you have them. Vine ripe from the store if you don’t)
  • 2 jalapeños (seeded)
  • 2 tbsp. green chilies
  • 1/2 tsp. salt
  • 1/4 cup onion
  • 3 cloves garlic
  • 1/2 tsp. cumin

Toss all the items in your blender or food processor. Taste and add more of what you need for your taste buds.

Mini Bruschetta (makes 20)

  • 20 triscuits (we used the tomato basil flavor)
  • 2 tomatoes (garden or vine ripe)
  • 2 tbsp. onions
  • 5 leaves basil
  • 1 tsp. garlic salt
  • 1 tsp. balsamic vinegar + 1 tsp. for drizzling
  • 1/2 tsp. olive oil

Directions

  1. dice tomatos
  2. dice onions
  3. chop basil
  4. toss all items together
  5. place a small heap on each cracker
  6. drizzle plate with additional balsamic vinegar

Pigs in a blanket (makes 14)

  • 1 package Pillsbury low fat crescent rolls
  • 1 package hebrew national 97% fat free kosher hot dogs

Directions

  1. Cut hot dogs into 3rds
  2. Unroll crescent rolls
  3. Cut each triangle of dough in half long ways to make to long triangles
  4. Roll each 3rd of dog in triangle of dough
  5. Bake at 350 for 10 mins. or until brown on top (watch closely. cook times are different than the package due to hot dogs)
  6. Serve with mustard, low sugar catsup or brown mustard
