Tip Tuesday – Fresh Hands

Cutting up onions or garlic can really stink….literally.  If you can avoid the crying you might still be left with a menacing oder on your hands that’s hard to get off. Try rubbing your hands on a stainless steel spoon. The spoon should absorb the oder!

Did you know that your kids can write to their favorite Disney character and they will send back an autographed 8X10 photo? Neither did we until now.

Here is how you do it:

Have your child write a letter to their favorite princess, hero, or traditional character. Place in a stamped envelope and mail to this address:

Food Friday – Pineapple Upside Down Cupcakes!

Pineapple upside down cupcakes…..These are the most delicious thing I’ve ever tasted! So lets get cookin

Cake Ingredients:

2 eggs
2/3 C white sugar
4 Tbsp pineapple juice
2/3 C all purpose flour
1 tsp baking powder
1/4 tsp salt

Topping:

1/4 cup butter (1/2 stick or 4 Tbsp)
2/3 C brown sugar
1-can pineapple rings
6-maraschino cherries

Preheat oven to 350 degrees.  Spray your muffin tins with non-stick cooking spray.

In a mixing bowl, add eggs, white sugar, and pineapple juice.  Beat for 2 minutes.  In a separate bowl, sift together the flour, baking powder, and salt.  Add to the wet ingredients and turn mixer back on for 2 minutes.

In a small sauce pan, melt the butter and add the brown sugar.  Stir on low heat for one minute.

Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin, then place a pineapple ring on top.  Add a cherry in the middle of each pineapple.    Pour cake mixture over to fill muffin tin 3/4 of the way full.  If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits.

Bake jumbo cakes for 25 minutes.  Bake regular cakes for 20 minutes.  If you choose to make a large cake, bake for 22-25 minutes in a 10 inch cast iron skillet.  The cake is done with a toothpick inserted in the middle comes out clean.

TIP: For an even easier version, just use your favorite hello cake mix rather than the cake instructions above!

Food Friday – Pumpkin Chili

As the fall approaches and the leaves change we get in the mood for our warm food favorites. Fall marks the chili season with football parties and pot lucks. Chili is a tailgate favorite, but pumpkin chili? Oh yes! It’s a flavor rush for the pallet. So next time you pull out the pot and your chili fixin’s, try this seasonal recipe instead.

 

 

 

Ingredients:

Original recipe makes 8 servings

Directions

  1. In a large pot over medium heat, cook beef until brown; drain. Stir in onion and bell pepper and cook 5 minutes. Stir in beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder and sugar. Simmer 1 hour.
