Food Friday – Dijon Vinaigrette

This homemade dressing is great on salads, veggies, and even on your meat. Try it out this summer!

What you need:The juice of 2 lemons

1 Shallot  - Diced

3 Tbs.  Dijon Mustard

2 Tbs. Red wine vinegar

1/2 cup Olive Oil

1 tsp. Parsley – Finely chopped

1 tsp. salt – to taste

Pinch of Pepper  - to taste

 

Combine all ingredients except olive oil in bowl

Whisk while adding olive oil slowly creating an emulsion
