Food Friday- Pumpkin Spice Muffins (low calorie!)
If you have seen this recipe before, you’re going to want to save it. This low fat, low calorie recipe is from the weight watchers recipe book and is to die for.
If that’s not enough, it is the easiest recipe ever.
What you need:
1 15 oz can pumpkin
1 spice cake mix
1 cup water
(yes thats it)
What you do:
Preheat oven to 350 degrees
mix all ingredients in bowl
use muffin papers (it might stick to your pan if you don’t)
Fill each muffin cup about 3/4 way full
Bake for 25 mins.
This yielded 21 muffins for us.
1 muffin: 73 calories, 1 g fat, 64 mg sodium, 11 carbs
These nutrition facts will change if you make smaller or larger muffins, use a different cake mix, add ingredients etc..
Kids love a few chocolate chips added to the batter! You can even frost them for a healthy cupcake option at a party.
